そもそもクラフトビールの定義とは
近年、徐々に浸透しつつある「クラフトビール」。日本においてその言葉に明確な定義はありませんが、「地ビール=クラフトビール」というのが一般的な認識だと思います。
一方、アメリカにおいては「クラフトビールは、クラフトブルワリーによって生産されたビール」であり、小規模ブルワリーによる事業者団体BA(Brewers Association)によって、下記の3要件を満たす事業者がクラフトブルワリーであると定められています。
Small(小規模)
Annual production of 6 million barrels of beer or less (approximately 3 percent of U.S. annual sales). Beer production is attributed to a brewer according to the rules of alternating proprietorships.
→年間のビール生産量が600万バレル(約7億リットル)以下であること。
Independent(独立性)
Less than 25 percent of the craft brewery is owned or controlled (or equivalent economic interest) by a beverage alcohol industry member which is not itself a craft brewer.
→クラフトブルワーではないアルコール飲料会社による所有率又は支配率が25%に満たないこと。
Traditional(伝統的)
A brewer that has a majority of its total beverage alcohol volume in beers whose flavors derive from traditional or innovative brewing ingredients and their fermentation. Flavored Malt Beverages (FMBs) are not considered beers.
→そのブルワリーにとっての主力製品であるビールの香りが、伝統的または革新的な材料と発酵方法によって生じていること。
お気づきだと思いますが、この定義に従うと、元々クラフトビールとして認められていたビールでも、企業として成長し生産量が拡大したり、買収されたりすると、その瞬間からクラフトビールではなくなるということになります。どこかクラフトブルワリーのプライドのようなものを感じますね。
日本でクラフトビールと呼ばれているものの中には、小規模で独立している地ビール企業のビールのみならず、大手が製造・販売しているビールも含まれています。今後、日本で「クラフトビール」という言葉がどういう意味を持っていくのか、注目です。
